Bread Recipe (with milk) from Alice
A different bread recipe.
The added ingredient of bread with milk adds a softness to the dough. This recipe is in the cookbook my sisters and I put together. This bread recipe comes from Alice, my just-older-than-me sister. She has four adult children and thirteen grandchildren. Her grandson Bryce is the one many of you prayed for when he experienced a near-drowning in September of 2019.
This is a bread recipe with milk. I’ve discovered that bread recipes with milk tend to produce a softer dough. Homemade bread is good with anything, but it’s especially great with grilled cheese sandwiches. I only eat grilled cheese sandwiches when they are made on homemade bread. After all, is there any other way to eat a grilled cheese sandwich?!
This recipe calls for lard (or shortening). I used real butter. This recipe makes good dinner rolls as well as good bread.
About the yeast
Most recipes call for the yeast to be dissolved in water with sugar. The sugar helps the yeast dissolve; the warm water also aids is the process.
You can also dissolved your yeast in cold water – but it might take a little longer. You will notice this recipe calls for a hot water mixture that dissolves the butter/shortening in the microwave. Then it calls for cold water to be added. The reason for this is to help cool the mixture so it will not be too hot, If the mixture is too hot, it will kill the yeast. You certainly don’t want that to happen! You can check the temperature. A safe temperature for adding yeast to a mixture is 110-115 degrees.
The Recipe for bread with milk
Buns and Bread with Milk
Ingredients
- 1/2 cup milk
- 1 1/2 cups hot water
- 1/3 cup lard (or shortening) OR butter
- 2 Tbsp salt
- 1/2 cup white sugar
- 3 1/2 cups cold water
- 3 Tbsp yeast
- 6-8 cups flour
Instructions
- Mix the first FIVE ingredients in microwave bowl and heat in microwave for 3 minutes
- Put cold water in mixing bowl and add the first mixture, then add flour
- Gently mix in yeast and let sit until yeast is "absorbed" in flour mixture
- Add 3-4 cups additional flour to make dough a proper consitency
- Put dough into a greased bowl
- Let the dough rise and punch down
- Let dough rise again
- Shape dough into rolls or loaves and put into greased pans
- Let rise until double
- Bake rolls at 350 for 20 minutes OR bake bread for 30 minutes
