Energy Bites
Energy bites.
Energy bites are a quick pick-me-up when you need a nutritious and easy snack. Mix the basic ingredients and then add your own variations. This is something your children can help mix up. If your kids are old enough, they can do it themselves.
This is a great snack to have on hand when you have little ones. Your teens with those bottomless pits will go for these when you have them sitting around. They’re more nutritious than a cookie and ice cream, that’s for sure.
The core ingredients are oatmeal, peanut butter, and honey. Add chocolate chips, raisins, almonds, flax seed, and anything else you’d like. Peanut butter give you protein. Oatmeal provides bulk and substance. It’s a great source of fiber, vitamins, and minerals. Flax seed provides protein, vitamins and minerals, and Omega 3 fatty acids. Almonds also provide protein, and raisins and honey are a great natural food source.
Roll into balls and put onto a tray in the refrigerator or freezer. Once frozen, you can stack them in zip-lock bags or a storage container, and they’re ready for use.
Store the energy bites in the freezer and get them out just a few minutes before you’re ready to serve. Adults and kids alike enjoy these!
I found this recipe in an issue of Daughter of Promise, a magazine open for all readers and geared for Anabaptist women. For more information about the magazine, click here.
