Black Bean soup – and about the recipe

Black bean soup is a nutritious and filling dish for any season. My daughter Sarah Beth put this recipe together, and her three boys like it a lot. It’s so simple and easy to make. This recipe also includes ingredients you are likely to have in your kitchen.She’s a busy mom of three (soon to be four) boys, so she’s all about saving time in the kitchen while serving healthy to her family. Our daughter finds a recipe and then adapts it to suit her family. This is one of those recipes.

For this recipe, you’ll have most (if not all) of the ingredients in your kitchen. Homemade chicken broth is by far the best, and so easy to make. I encourage you to try this recipe for yourself.

Black Bean Soup

An easy recipe for black bean soup without a lot of fun - but a lot of fanfare. This is simple, nutritious, and tasty.

Cook Time 35 minutes

Ingredients
  

  • 1/2 red pepper
  • 3/4 cup baby carrots
  • 1/2 yellow onion
  • 2 tsp. minced garlic
  • 1 Tbsp butter
  • 2 cans black beans (Drained and Rinsed)
  • 2 cups chicken broth
  • 1 bay leaf
  • 2 tsp. oregano
  • 2 tsp kosher salt
  • 1 Tbsp pepper
  • Toppings: Sour cream, cilantro leaves, lime, shredded cheese

Instructions
 

  • Chop pepper, carrots, onion, and minced garlic
  • saute with butter for 5 min. until softened
  • Add black beans, chicken broth, and seasonings
  • Simmer for 20-30 minutes until all veggies are soft
  • Remove bay leaf
  • Serve as is OR use immersion blender (or regular blender) to blend soup fully or make partially smooth
  • Top with your choice of toppings
