Baked Strawberry Oatmeal

Strawberry oatmeal

Strawberry oatmeal is a great addition to a summer breakfast. This is one of my go-to recipes. I make a pan and then divide it into portions and freeze for later use.  When you make this oatmeal, you provide a healthy meal for your family. You can use other fruit, but this one is specifically geared for adding strawberries to the oatmeal.

For this recipe, you can use old-fashioned oats or regular oats. You can use name brand or a generic brand. This is one recipe where you will not be able to tell the difference.

You can add other fruit on top of the oatmeal once it is baked: bananas, blueberries, or blackberries. Either one adds a healthy fruit choice to your menu.

My daughter Sarah Beth concocted this recipe this summer when one of her boys kept asking for strawberry oatmeal. She’d never made this recipe before, but it was a hit. As a mom of three boys, she values her time and finds easy recipes that add nutrition to her table and satisfies the palates of her growing boys. 

Benefits of oatmeal

Oatmeal is a healthy grain and provides roughage. It is good for gut health, rich in antioxidants, and helps maintain blood sugar and lowers cholesterol. Eating oatmeal can make you feel fuller longer. 

The recipe for strawberry oatmeal

Baked Strawberry Oatmeal

A simple yet nutritious baked oatmeal with strawberries. Easy to make and freezes well also.

Ingredients
  

  • 3 cups oatmeal
  • 1/3 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup milk
  • 2 1/2 cups strawberries, divided
  • 1 teaspoon vanilla
  • 1 tablespoon butter - use to melt in bottom of pan to grease it

Instructions
 

  • Mix eggs, vegetable oil, and sugar together well
  • Mix dry ingredients - oatmeal, salt, baking powder
  • Blend 1 cup milk with 1 cup strawberries in blender
  • Mix the wet and dry ingredients together (including strawberries blended with milk)
  • Fold 1 cup sliced strawberries into the batter mixture
  • Put into a greased 8 x 8 inch pan. You can melt the butter in the bottom of the pan or grease it another way.
  • Add the remaining 1/4 cup sliced strawberries on the top of the oatmeal mixture
  • Bake at 400 for 25 minutes or until done
