I added veggies to a coleslaw a few weeks ago and call it 4-vegetable slaw. Most of us have our coleslaw recipe we make. Some of us use store-bought dressing and some of us make our own. A few weeks ago I was tired of eating the raw veggies in my fridge. So, I added them to my slaw. 

Interestingly, the veggies all start with C.  So you can call this a 4-C Veggie slaw. The four vegetables? Cabbage, carrots, cauliflower, and cucumbers. My Bosh shredder made shredding the vegetables easy. Adding these vegetables adds color as well as roughage and vitamins to the dish.

Here is the south, folks don’t use a fork to eat their slaw. They put it on top of their hot dog. Where I grew up, slaw is served as a side dish. Imagine my consternation when I asked for a fork at a school PTO fundraiser. The folks dishing up slaw looked at me as if I was crazy. Truth be told, I thought they were crazy for serving slaw without any utensils! The slaw was in a small container so it could be dished onto the hot dog. I learned, believe me. But when it comes to slaw, I still eat mine with a fork and as a side dish.

With this recipe, you can add as few or as many vegetables in addition to the cabbage. You’ll want the cabbage to be the  main part of the dish. I used three cups shredded cabbage and add a little over a cup total of the other three vegetables (carrots, cucumbers, and cauliflower).

The recipe for 4-vegetable coleslaw

4-Vegetable Coleslaw

The addition of 3 vegetables to cabbage makes this a 4-vegetable slaw. Add cucumbers, cauliflower, and carrots to caggage.
Prep Time 10 minutes
Servings 4

Ingredients
  

  • 3 cups shredded cabbage
  • 1/3 cup finely shredded carrots
  • 1/3 cup shredded cauliflower
  • 1/3 cup shredded cucumbers
  • 1/2 cup mayonnaise
  • 1 Tablespoon vinegar
  • 2 Tablespoons sugar
  • 1/4 tsp salt
  • 1/4 tsp. pepper

Instructions
 

  • Clean vegetables - you do not need to peel
  • Shred cabbage, carrots, cucumber, and cauliflower - SEPARATELY
  • Combine the four vegetables
  • For the dressing, mix ingredients together: Mayonnaise, vinegar, sugar, salt, pepper
  • Add dressing to the vegetable slaw mixture - a little at a time
  • Refrigerate until ready to serve
  • Place into a pretty glass dish and sprinkle a little more pepper on top (if desired). Serve.
