4-Vegetable Coleslaw

The addition of 3 vegetables to cabbage makes this a 4-vegetable slaw. Add cucumbers, cauliflower, and carrots to caggage.

Ingredients
  

  • 3 cups shredded cabbage
  • 1/3 cup finely shredded carrots
  • 1/3 cup shredded cauliflower
  • 1/3 cup shredded cucumbers
  • 1/2 cup mayonnaise
  • 1 Tablespoon vinegar
  • 2 Tablespoons sugar
  • 1/4 tsp salt
  • 1/4 tsp. pepper

Instructions
 

  • Clean vegetables - you do not need to peel
  • Shred cabbage, carrots, cucumber, and cauliflower - SEPARATELY
  • Combine the four vegetables
  • For the dressing, mix ingredients together: Mayonnaise, vinegar, sugar, salt, pepper
  • Add dressing to the vegetable slaw mixture - a little at a time
  • Refrigerate until ready to serve
  • Place into a pretty glass dish and sprinkle a little more pepper on top (if desired). Serve.
