4-Vegetable Coleslaw
The addition of 3 vegetables to cabbage makes this a 4-vegetable slaw. Add cucumbers, cauliflower, and carrots to caggage.

- 3 cups shredded cabbage
- 1/3 cup finely shredded carrots
- 1/3 cup shredded cauliflower
- 1/3 cup shredded cucumbers
- 1/2 cup mayonnaise
- 1 Tablespoon vinegar
- 2 Tablespoons sugar
- 1/4 tsp salt
- 1/4 tsp. pepper
Clean vegetables - you do not need to peel
Shred cabbage, carrots, cucumber, and cauliflower - SEPARATELY
Combine the four vegetables
For the dressing, mix ingredients together: Mayonnaise, vinegar, sugar, salt, pepper
Add dressing to the vegetable slaw mixture - a little at a time
Refrigerate until ready to serve
Place into a pretty glass dish and sprinkle a little more pepper on top (if desired). Serve.
