Mini Corn Muffin Dogs
Quick and easy
For a quick snack, a snazzy appetizer, or a party food, try these mini corn muffin dogs.
You don’t need a lot of ingredients, and that’s what makes them simple and fun to make, especially if you are pushed for time. They’re also a great idea for a quick snack or party.
You’ll need a box of corn bread mix, milk and eggs. (The package you buy might call for water or oil instead of milk; just follow those directions.)
You also need cocktail smokies or hot dogs. Once you’re mixed the batter and put it into your mini-muffin pans, cut the smokies in half and insert them into the center. If you’re using hot dogs, you’ll need to cut them in more than two pieces. You don’t want the dogs higher than the muffin tin.

At our grandson’s birthday party, I asked the kids about these corn muffin dogs and got rave reviews. One boy, however, said it needed two hot dogs instead of just one in the muffin mix. So, there you have it.
Grab a box of cornbread mix and a pack of smokies or hot dogs. Then spend a few minutes in your kitchen mixing up the batter to make these corn muffin dogs.
You can grease your mini-muffin pan, but the paper liners work better.
Follow box directions
Follow the directions on the box to make the mix. You’ll need enough boxes to make 24 mini muffins unless you’re doing a smaller amount. Fill the cups 2/3 full – not more.

Corn Muffin Dogs
- 3 boxes corn muffin mix
- 1 package cocktail smokies or hot dogs
- (eggs, milk, water, oil as directed on the box)
- Put muffin mix in a bowl
- Add ingredients listed on the box
- grease mini muffin pans OR use paper cups
- fill muffin cups 2/3 with batter
- add 1/2 cocktail smokie or 1/4 hot dog in the center of each cup
- bake at 400 for 15-20 minutes or until done
