Peanut Butter Chocolate Chip Cookies
Peanut butter and chocolate chips.
My friend Emily shared this recipe with me. It’s such an easy one, and you can adjust the sugar depending on the amount of sugar in the peanut butter you use.
Cookies are a delight to serve to kids when they need a quick snack, especially when they come home from school. While I love a good cookie, I caution us to think of healthy snacks we can serve instead of loading our kids up with sugar. One cookie is one thing – but a half-dozen is something else.
You’ll just need ingredients you usually have in your kitchen for these peanut butter chocolate chip cookies. This is basically a dump and mix recipe. Mix your butters and sugars. Then add eggs and all ingredients except the flour. Add the flour and put the chocolate chips on top – it keeps the flour from flying out of the mixing bowl. 🙂
Variations of the recipe.
Nuts are optional, and you can skip the chocolate chips if you’d rather just have peanut butter cookies. My recipe decreases the sugar total in half. The peanut butter I used is sweet enough, and I like to keep cookies as healthy (while still tasty) as possible. If they are not sweet enough for you, you can add more sugar.
