Comfort macaroni

There’s something comforting about homemade baked macaroni. This recipe can be made a day or two ahead and baked the day you want to serve.  It’s also great for a crowd; you can double or triple the recipe.

For this recipe, you use ingredients you usually have in your kitchen – except possibly macaroon cheese. You can substitute cream cheese if you’d like. 

You can also substitute different cheeses if you don’t have every cheese for which this recipe calls. I’ve found that if I double or triple the recipe, I do not need to double or triple the cheese exactly. You can use a little less cheese, especially if you are a little short. 

I like this homemade baked macaroni recipe for large crowds. I also like it for a small crowd because it’s an easy fix as a leftover.

Benefits of pasta

It’s true that pasta is a carbohydrate and should be eaten in moderation. Whole grain pasta is by far the healthiest. Refined macaroni is lower in fiber. Both contain minerals that are beneficial.  If you’re from the south, you’re gonna have your pasta. Remember to pair it with lean meats and vegetables. Use moderation – and enjoy!

Homemade Baked Macaroni Recipe  

Homemade Baked Macaroni

Ingredients
  

  • 2 cups elbow macaroni
  • 2 tbsp butter (unsalted preferred)
  • 1 large egg
  • 1 13 oz. can evaporated milk OR heavy cream
  • 1 cup whole milk
  • 8 oz. sharp white cheddar cheese - grated
  • 8 oz. mild cheddar cheese OR monterey jack OR mozzarella - grated
  • 8 oz. mascarpone cheese OR cream cheese
  • 1 1/2 tsp salt OR less if you use salted butter
  • 1/2 tsp. dry mustard powder OR 1/4 tsp. mustard
  • 1/8 tsp ground nutmeg (do not overdo this amount!)

Instructions
 

  • Cook macaroni for 12 minutes
  • Drain, then stir in butter
  • Combine milks and mascarpone (or cream cheese) in a bowl and whisk until smooth
  • Stir in 3/4 of the shredded cheese, seasonings, and egg, and buttered macaroni
  • Put into a buttered casserole dish
  • Top with remaining shredded cheese
  • Bake at 350 until bubbly - usually 25-30 minutes.
  • Let sit for 15 minutes so it can set.
