Homemade Baked Macaroni
an easy, do ahead recipe that is soft and cheesy

- 2 cups elbow macaroni
- 2 tbsp butter (unsalted preferred)
- 1 large egg
- 1 13 oz. can evaporated milk OR heavy cream
- 1 cup whole milk
- 8 oz. sharp white cheddar cheese - grated
- 8 oz. mild cheddar cheese OR monterey jack OR mozzarella - grated
- 8 oz. mascarpone cheese OR cream cheese
- 1 1/2 tsp salt OR less if you use salted butter
- 1/2 tsp. dry mustard powder OR 1/4 tsp. mustard
- 1/8 tsp ground nutmeg (do not overdo this amount!)
Cook macaroni for 12 minutes
Drain, then stir in butter
Combine milks and mascarpone (or cream cheese) in a bowl and whisk until smooth
Stir in 3/4 of the shredded cheese, seasonings, and egg, and buttered macaroni
Put into a buttered casserole dish
Top with remaining shredded cheese
Bake at 350 until bubbly - usually 25-30 minutes.
Let sit for 15 minutes so it can set.
