Dave’s Waffles
Starting them young
When our kids were young, Dave started a tradition of fixing pancakes for breakfast. Sometimes he made waffles. One morning when he was out of town, I decided to make pancakes, whereupon I was informed that I did not know how to make pancakes or waffles: only Papa knows how, I was told!
I made the pancakes and the kids let me know they were not as good as Dave’s. So now I purchase the ingredients and he makes the pancakes and waffles.
Jiffy Mix for the Waffle Win
I know many of us like to start from scratch, but Dave doesn’t. He uses Jiffy Mix. Trust me, he has tried every mix on the shelves, and he always comes back to Jiffy Mix. Our problem now is that now all grocery stores carry Jiffy Mix, so we sometimes have to search and find.
In addition to Jiffy Mix, you’ll need vegetable oil, milk, eggs, baking powder, lemon juice, and vanilla. When he makes waffles, he adds a little more oil. We serve these for breakfast, brunch, Sunday dinner, or sometimes for supper. One evening when I was out of town and he was watching our six plus two others, he made pancakes for supper. The kids loved it and no one missed mom’s cooking.

The Recipe
Dave's Waffles
Ingredients
- 2 cups Jiffy Mix
- 2 eggs
- 1 1/2 cups milk
- 3 Tablespoons vegetable oil
- 1-2 Tablespoons lemon juice
- 1 Tablespoon baking powder
- 1 teaspoon vanilla
Instructions
- Mix all ingredients together
- Let sit for at least 5 minutes (it gives the baking powder a chance to work)
- Heat waffle iron until hot
- Do not grease waffle iron
- Put batter on waffle iron
- Turn when brown on one side
- Serve
