Herb Noodles in Chicken Broth

Herb noodles, something that’s an easy fix when you need an extra side dish, or a filler. Use this to go with a main dish. Add your own herbs and seasonings for added flavor.
For better flavor and nutrition, cook your noodles in chicken broth. Believe me, I know. I grew up with noodles cooked in turkey or chicken broth, and when I have noodles cooked in water, they taste bland.
Cook your own chicken and broth for better homemade goodness and nutrition. When they are done, add some butter, garlic powder, and parsley. Stir together until butter is melted. Then serve as a side dish or serve with chicken on top with a sauce.
This dish is tasty and will be enjoyed by everyone. The chicken broth (especially if it’s your own) is nutritious and gives a lot of flavor to the noodles.
My mother served noodles cooked in turkey broth (minus the herbs) with buttered bread crumbs on top for Christmas dinner. Watch for the “how to” on this dish!
You can serve chicken over these noodles and add browned butter sauce over top if you’d like. The browned butter sauce gives an extra oomph and flavor to the herb noodles.

Herb Noodles with Chicken Broth
Ingredients
- 1 quart chicken broth and water
- 2 cups noodles
- 1.5 teaspoon salt
- 2 Tablespoons butter
- 1 teaspoon garlic powder
- 1 Tablespoon parsley
Instructions
- Bring water/broth to a boil
- Add noodles and salt
- Cook 8 minutes or until done
- Drain noodles
- Add butter, stirring until it is melted
- Add garlic powder and parsley
- Stir and serve
