The Bars

This Sour Cream Raisin Bars recipe is a new recipe for me, but I like it! You’ll make a crust and a filling. The filling goes between the top and bottom crust.

If you’re a fan of raisins and oatmeal, you’ll like this recipe. Even though you have to cook the filling, it doesn’t take any longer than baking a batch of cookies because it’s all put into one pan.

For the filling, you’ll need raisins, sour cream, egg yolks, sugar, and cornstarch. For the crust, you’ll need butter, brown sugar, flour, oatmeal, and baking soda.

You will want to let these bars cool before you cut them. I learned this when my bars wanted to crumble because they were too warm.

The story behind the raisin bars

I found this recipe in the cookbook, My Sister’s Recipes. The sisters who compiled this cookbook are Lois, Deb, Phoebe, and Julia. Their mom Miriam is my cousin, and I babysat these gals back in the day. I was tickled to get their cookbook and read the stories they share about who they are and their family traditions. I put the top crust between layers of wax paper and rolled it out evenly with a rolling pin. This worked great for me. oatmeal raisin bars

Sour Cream Raisin Bars

My Windowsill
An oatmeal bar with a raisin sour cream filling. Easy to mix up, bake, and delicious to serve. Freezes well.
Prep Time 25 minutes
Cook Time 30 minutes
Total Time 55 minutes

Ingredients
  

  • FILLING: 4 egg yolks
  • 1 1/2 cups sugar you can decrease this
  • 3 Tablespoons cornstarch
  • 1 cup raisins
  • 2 cups sour cream
  • CRUST: 1 cup butter
  • 1 cup brown sugar
  • 1 3/4 cup oatmeal
  • 1 3/4 cup flour
  • 1 teaspoon baking soda

Instructions
 

  • FILLING: Mix ingredients together
  • Bring to a boil over low heat.
  • Cook until thick, about 15 minutes
  • Set aide
  • CRUST: cream butter and brown sugar
  • Mix in remaining ingredients.
  • Pat half of the mixture in the bottom of a 9 x 13 baking pan
  • Spread with filling
  • Top with remaining crust mixture
  • Bake at 350 for 30 minutes or until done
