Pork BBQ is a southern dish
Pork BBQ is a southern dish and I confess I never had it before I moved to southern Virginia. I grew up on pork chops, ham, and bacon. But other pork dishes were fairly new to me, including this recipe. It’s an easy fundraiser for folks in the south, and you can add coleslaw, baked beans, and a bun to go with it. When you’re doing a fundraiser, you don’t much pay attention to the carbs in the meal because, after all, this is the south. You can eat the BBQ on the side or in a bun. You can top it with coleslaw or eat it as a side.
Once you’ve roasted the pork, it’s simple to shred it by using a mixer or a meat handlers. I put mine into my Bosch and used the wire whisks to “shred” it in just a few minutes. Serve the pork with BBQ sauce on the side – or mix it in if you’d like.
Since I’m not a big fan of a lot of BBQ sauce, I like to drizzle a little bit on the top. Use your favorite BBQ sauce or make your own.
The how to
To make this dish, purchase a pork butt (on sale, preferably). If it’s frozen, you have several choices: thaw it completely before placing it in the slow cooker, or put it in frozen the night before.
Slice onions and place on top of the pork. Add 1/2 – 1 cup of apple juice (I use low-sugar) poured on top. If it’s a small roast, you’ll need a 1/2 cup; if you’ve got a large one over 8 pounds, add a cup of juice. Set your crock pot (slow cooker) on low if you have 8-10 hours to cook it. If you don’t have that much time or it’s a little frozen in the middle, put it on high for several hours and then turn the slow cooker to low. You can season with salt and pepper if you’d like.
I like to do a large roast and then put some of the meat in the freezer. It’s an easy find for a quick meal. Dave likes when there’s a container in the fridge so he can breeze in, warm up the BBQ, and have a quick sandwich when he has to eat on the run.
I got this recipe from my niece Bonita, who is a bomb of a cook. She served it one day to a group of folks who came to help them remodel their house. Add some chips, slaw, and baked beans, and you’ve got a meal. Of course, you can add vegetable sticks to the menu to give a more balanced meal.
- Pork roast - any size you need
- 1 onion - sliced
- ¼ - ½ cup apple juice (depending on how large your roast is)
- Place pork roast into crock pot or slow cooker
- Place sliced onions on top
- Pour apple juice over the roast
- Slow cook on low for 8-10 hours
- Remove from cooker
- Shred using a meat handler OR put into a mixer, using wire whisks and turn for about a minute
- Serve with your favorite barbecue sauce on the side
