What orzo is
This orzo vegetable dish is simple and versatile. What is orzo? Orzo is a pasta rich in protein, and is a form of short-cut pasta, shaped like a large grain of rice. Traditionally made from white flour, it can also be made of whole grain.
Orzo vegetable dish – Fix it fast
To fix orzo, you can cook it on the stovetop or do it in an Instant Pot. It has a fast cooking time and is easy to do. You can fix a large amount and store it in the refrigerator. Then, when you want to add it to soups or make a dish using orzo, it’s ready to go.
That’s what I did with this recipe. I wanted something healthy to eat and used what was in my kitchen: orzo, onions, peppers, tomatoes, black beans, and cheese. Add some seasonings and you’re all set. I’m not a fan of stewed tomatoes, so I added chopped tomatoes just before serving, and added a little drizzle of cheese on top. You only need a touch of butter (or margarine) to sauté your onions and peppers.
Nutritious and healthy – that’s what this orzo vegetable dish is. It’s such a quick snack to fix, or you can add it to your menu when you’re serving a meal. I found this dish satisfying and filling, and I’m sure you will, too.
The recipe
Orzo Vegetable Dish
Ingredients
- 1 Tablespoon butter or margarine or less
- 1/4 pepper diced
- 1/4 onion chopped
- 1 clove garlic OR garlic powder
- Salt and pepper to taste
- 1/4 cup cooked black beans - optional; dried and cooked or canned; I prefer dried/cooked
- Sliced carrots celery, or other vegetables - optional
- 1 cup orzo cooked
- 1/4 cup chopped tomatoes
- 1-3 teaspoons shredded cheese cheddar, mozzarella, or mixed
Instructions
- Sauté onions, peppers, and garlic in skillet butter until translucent.
- IF using other raw vegetables, sauté them as well.
- Add orzo
- Add cooked black beans
- Stir until heated, and add salt, pepper, garlic powder, etc. to taste
- Remove from skillet
- Place in dish
- Add chopped tomatoes on top
- Garnish with cheese
- Serve
