Homemade Pizza Dough
Homemade is best!
My family loves homemade pizza. The recipe for the pizza dough comes from my sister Loretta, who lives in Nebraska. She’s a mom to five and grandmother of twenty-three. I snarfed this recipe from her when we visited in Nebraska many years ago. It’s simple and easy to make. Olive oil and regular dough ingredients such as flour, sugar, yeast and salt make up this recipe.
The Dough
This recipe makes three large pans of pizza. To put the dough onto the tray, you push the dough away from you; if you pull it toward you, it will tear. Begin in the center of the pan and then nudge a little bit at a time toward the edge of the pan.
This dough is good therapy for children who need something to do with their hands. Our children and our foster children loved helping put the dough on the pans. It doesn’t matter if it’s not perfectly round or even; your toppings will hide a multitude of errors anyhow.
One for now, two for later
On days when our nest is empty, I divide the dough into three sections and make one pan of pizza. The other two sections get wrapped in waxed paper and put into a freezer zip-lock bag. When I want to make another pan, I just thaw the dough for a few hours until I’m ready to use it.
After you put the sauce on the dough, add your other ingredients. If you’re making more than one pan, you can vary the pizza. Make one an “everything on it” pizza and fix one for kids with just cheese. Add peppers, onions, mushrooms, olives and meat toppings (ham, hamburger, pepperoni, sausage, bacon, Philly steak). I bake it without the cheese for the first 15 minutes until the dough is almost done. For the last five minutes of baking, add the cheese and let it melt. I’ve also used cast iron skillets to make “personal pan pizzas”.
