Sour cream chicken!
There are so many recipes for chicken out there that it’s hard to know which one to try. A few weeks ago I tried a new recipe. It’s actually a combination of ingredients I saw in several other recipes, and I came up with my own. This one is so simple and easy to make. You can make most of it ahead and then put it under the broiler just before you’re ready to serve.
I have used boneless chicken thighs or boneless chicken breasts for this recipe. Both of them are tender and tasty. You can also mix and match if you’d like. All of us have different preferences for taste and for health, so you can tweak this to satisfy your family’s tastes.
The only ingredients you’ll need is chicken, sour cream, shaved parmesan cheese, and seasonings. I like to use onion powder and garlic powder. You might like red pepper flakes, oregano, soul seasoning, or another seasoning that gives it more snap. If you’re concerned about health, substitute non-fat Greek yogurt in place of the sour cream. Or do half sour cream and half yogurt. The possibilities are endless.
When baking your chicken, the time is affected by the thickness and size of your pieces. Consider that when you set your timer, and add more time if the chicken is not tender.

Baked Sour Cream Chicken
Ingredients
- 6 chicken breasts OR 6 chicken thighs skinless and boneless
- 1 cup sour cream OR 1 cup yogurt - or a combination of both
- 1 cup+ parmesan cheese
- 1 Tablespoon onion powder
- 1 Tablespoon garlic powder
- 1 4- oz can mushrooms drained
- Salt and Pepper
Instructions
- Put chicken in a single layer in bottom of a baking dish that has been oiled
- Mix sour cream and cheese together until smooth, then add seasonings
- Stir in mushrooms
- Spread chicken mixture on top of chicken pieces
- Sprinkle with more parmesan cheese
- Bake at 375 for 40-50 minutes, until tender
- Broil for 3-4 minutes until top is browned
- Serve
