Black Bean Soup
An easy recipe for black bean soup without a lot of fun - but a lot of fanfare. This is simple, nutritious, and tasty.

- 1/2 red pepper
- 3/4 cup baby carrots
- 1/2 yellow onion
- 2 tsp. minced garlic
- 1 Tbsp butter
- 2 cans black beans (Drained and Rinsed)
- 2 cups chicken broth
- 1 bay leaf
- 2 tsp. oregano
- 2 tsp kosher salt
- 1 Tbsp pepper
- Toppings: Sour cream, cilantro leaves, lime, shredded cheese
Chop pepper, carrots, onion, and minced garlic
saute with butter for 5 min. until softened
Add black beans, chicken broth, and seasonings
Simmer for 20-30 minutes until all veggies are soft
Remove bay leaf
Serve as is OR use immersion blender (or regular blender) to blend soup fully or make partially smooth
Top with your choice of toppings
