Baked Strawberry Oatmeal

A simple yet nutritious baked oatmeal with strawberries. Easy to make and freezes well also.

Ingredients
  

  • 3 cups oatmeal
  • 1/3 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup milk
  • 2 1/2 cups strawberries, divided
  • 1 teaspoon vanilla
  • 1 tablespoon butter - use to melt in bottom of pan to grease it

Instructions
 

  • Mix eggs, vegetable oil, and sugar together well
  • Mix dry ingredients - oatmeal, salt, baking powder
  • Blend 1 cup milk with 1 cup strawberries in blender
  • Mix the wet and dry ingredients together (including strawberries blended with milk)
  • Fold 1 cup sliced strawberries into the batter mixture
  • Put into a greased 8 x 8 inch pan. You can melt the butter in the bottom of the pan or grease it another way.
  • Add the remaining 1/4 cup sliced strawberries on the top of the oatmeal mixture
  • Bake at 400 for 25 minutes or until done
