Baked Strawberry Oatmeal
A simple yet nutritious baked oatmeal with strawberries. Easy to make and freezes well also.

- 3 cups oatmeal
- 1/3 cup sugar
- 2 tsp. baking powder
- 1/2 tsp salt
- 2 eggs
- 1/2 cup vegetable oil
- 1 cup milk
- 2 1/2 cups strawberries, divided
- 1 teaspoon vanilla
- 1 tablespoon butter - use to melt in bottom of pan to grease it
Mix eggs, vegetable oil, and sugar together well
Mix dry ingredients - oatmeal, salt, baking powder
Blend 1 cup milk with 1 cup strawberries in blender
Mix the wet and dry ingredients together (including strawberries blended with milk)
Fold 1 cup sliced strawberries into the batter mixture
Put into a greased 8 x 8 inch pan. You can melt the butter in the bottom of the pan or grease it another way.
Add the remaining 1/4 cup sliced strawberries on the top of the oatmeal mixture
Bake at 400 for 25 minutes or until done
