Vegetable Soup 2 + 2 + 2

A combination of two cups of every vegetable simmered with tomato juice and browned beef is the basis for this recipe

Equipment

  • 1 large kettle

Ingredients
  

  • 2 cups tomato juice
  • 2 cups cabbage, chopped
  • 2 cups carrots, peeled and sliced
  • 2 cups corn
  • 2 cups green beans (frozen is best)
  • 2 cups lima beans
  • 2 cups onions
  • 2 cups peas
  • 2 cups potatoes, peeled and diced
  • 2 - 3 pounds beef tips
  • 2 cans petite tomatoes

Instructions
 

  • Sauté beef until tender
  • Put tomato juice and tomatoes into kettle, then add beef
  • Add the other vegetables
  • Season with Salt and Pepper, as desired
  • Bring to a boil, then turn down and simmer until vegetables are done
