Salmon Patties
an easy recipe for salmon. You can mix it ahead and then fry it up at the last minute.

- 1 14+ oz. can salmon
- 4 Tbsp butter, divided (or use half Olive Oil)
- 3/4 cup chopped onion
- 1/2-3/4 cup chopped red pepper (can use green but the red adds color)
- 1/2 cup bread crumbs OR crackers
- 1 egg beaten
- 2 Tbsp mayonnaise
- 1 tsp. Worcestershire sauce
- 1/2 tsp sea salt
- 1/2 tsp garlic powder
- S & P to taste
- 2 Tbsp parsley (you can use fresh)
Saute onions and pepper in olive oil OR butter
Combine all the other ingredients, then add the onions and peppers.
Shape patties together - as large or as small as you like.
Melt butter OR Olive oil in skillet, and saute on both sides until done.
Serve as a main dish or as a sandwich.
