Poppyseed Chicken

An easy sauce over chicken with poppyseed for flavor and flair. Can be fixed ahead or done the day of your meal.

Ingredients
  

  • 4 cups chicken breast pieces or you can use boneless dark meat
  • Olive oil for sauteing
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 can cream of chicken soup
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 4 oz. mushrooms drained (optional)
  • 1 1/2 teaspoons poppyseeds
  • 1 tsp. chicken seasoning
  • CRUMB TOPPING
  • 1 package Ritz crackers
  • 1/4 cup butter melted
  • 1 tsp. poppy seeds

Instructions
 

  • Cut chicken into bite-sized pieces.
  • Sauté in olive oil until cooked through. Do not sauté too long.
  • Drain.
  • Mix all sauce ingredients, then add chicken
  • Put into a 9 x 13 inch pan
  • Bake at 350 for 20 minutes
  • Put crumbs on top and bake 15 minutes longer or until bubbly
  • Serve over rice or noodles
