Classic Cheesecake

- 1 1/2 cups crushed graham crackers
- 1/3 cup butter
- 16 oz. cream cheese
- 16 oz. ricotta cheese
- 4 eggs
- 1/2-3/4 cup sugar
- 1 tsp. vanilla
Crush graham crackers and mix with melted butter
press into the bottom of a spring form pan
Drain ricotta cheese
Beat cream cheese, ricotta cheese, and sugar
Add eggs to the mixture - one at a time
Add vanilla
Pour into graham cracker crust
Bake at 425 for 10 minutes
Lower the oven temperature to 350
Bake for another 40 -50 minutes or until done
Cool slightly
Remove the outside of the pan
Refrigerate until chilled
Serve plain or with toppings of choice
