My Favorite Potato Salad

You can decrease these ingredients in half if you're not making for a family potluck. Be sure to keep the salad refrigerated until you are ready to serve it. Be careful not to add too much dressing, because it will go further than you think. Mix it together several hours or the night before for the best flavor.

Course Potato Salad
Servings 12 -16 cups

Ingredients
  

  • 12 cups potatoes approximately 5 lbs.
  • 12-18 hard boiled eggs
  • 1/2 onion chopped
  • 2 cups finely chopped celery
  • 3 cups salad dressing not mayonnaise
  • 6 Tbsp. mustard
  • 2 tsp. salt
  • 1 1/2 cup sugar
  • 1/4 cup vinegar

Instructions
 

  • Cook potatoes
  • Cool, then peel
  • Shred or dice the potatoes
  • Add chopped eggs, onion, and celery
  • Mix dressing ingredients together
  • Mix with potatoes and vegetables
