Creamy Chicken Broccoli Rice casserole
Easy to put together since you're using ingredients already in your fridge. Tasty and nutritious, too.

Cook Time 30 minutes mins
- 1-2 cups chopped chicken
- 1 1/2 cups cooked rice
- 1 1/2 cups broccoli, carrots, cauliflower mixture
- 1 can cream of mushroom soup (I use my homemade)
- 1/2 cup shredded cheddar
Combine chicken, rice, and veggies in a bowl
Add the cream of mushroom soup and mix well
Add shredded cheese
Put into a 1 1/2 quart casserole dish
Bake at 350 for 30+ minutes or until hot through
You can mix this ahead and put it in the refrigerator. You'll need to increase the baking time if the dish is cold when it goes into the oven
