Cheeseburger Soup #2

A cheeseburger soup rich in hamburger and vegetables.

Ingredients
  

  • 1- 1 1/2 lb. hamburger, fried
  • 3 cups chicken broth
  • 2 Tablespoons butter
  • 2 large carrots, sliced thin (approx. 3/4 cup)
  • 2 stalks celery sliced (approx 3/4 cups
  • 1 small onion, diced
  • 4 cups peeled, diced potatoes
  • 2 cups shredded cheddar cheese
  • 1 tsp. parsley
  • 2 Tbsp. Mustard
  • 1-2 Tablespoons flour
  • 1 1/2 cups milk
  • 1 Tbsp salt
  • 1/2 tsp. pepper
  • 1/2 cup sour cream

Instructions
 

  • Melt butter in kettle
  • Saute celery, carrots, and onion together in butter
  • add chicken broth and cook vegetables until tender
  • Add fried hamburger and seasonings (Salt and pepper)
  • Add parsley and mustard
  • Mix flour with 1/2 cup milk; stir into boiling soup, stirring
  • Continue to stir until soup starts to thicken; then add remainder of milk
  • add cheese and stir until melted
  • When cheese is melted, take off heat and add sour cream
