This is an easy one-dish meal that can be ready to serve with one hour after beginning. Serve with some fresh fruit or applesauce.

- 2 large onions diced
- 1 green pepper chopped
- 1 clove garlic optional
- 3 Tbsp olive oil or butter
- 1 pound hamburger fried and drained
- 2 cups canned tomatoes
- 1/2 cup uncooked rice
- 1 teaspoon chili powder
- 1 1/2 tsp. salt
- 1/4 teaspoon pepper
- 1 can corn optional
Fry onion, pepper, and garlic in oil or butter
Add hamburger, stirring together
Stir in tomatoes, rice and seasonings
Add corn (optional)
Stir, then cover with a lid and simmer about 20-30 minutes until rice is cooked
OR cover and bake in oven at 375 for approximately 50 minutes
