For those of us who think we don’t like kale, think again. You’ll like this festive kale salad. You get to decide what to add to the kale, and once it’s put together, you’ll be coming back for more.

My daughter-in-law Rae puts this festive kale salad together often, and it’s always a treat. There’s no real rhyme or reason on how to do this or what to add, but there’s one important part. Do this important part, and you’ll have it made.

After the kale is clean, rub olive oil(with sea salt) onto each kale leaf, using your fingers. It needs to be enough to brighten the kale, but not enough to leave drippings in the bowl.

Next, you add your ingredients: petite provolone cheese chunks, craisins, slivered almonds, pumpkin seeds, and shredded parmesan cheese. Add more or less of each ingredient, depending on your taste preferences and how it looks. Mix it together and serve.

Rae served this kale salad the other evening at our women’s Christmas dinner. One of my friends was not going to take some. I told her she had to try this salad. She did, and she liked it. If you know my friend, you’ll know what feat this was. She does not do kale, raw or cooked. But she liked this salad.

Prepping the kale takes a little bit of time, but this kale salad is worth the effort. Nutrition, color, flavor, and texture all combine to make this a great salad.

Ingredients
  

  • 4 - 6 cups Kale
  • 1/2 cup craisins
  • 1/2 cup slivered almonds
  • 1 cup cubed provolone cheese
  • 1/2 cup pumpkin seeds
  • 1/2 cup parmesan cheese shredded - optional
  • Sea salt
  • Olive Oil

Instructions
 

  • Rub each kale leaf with olive oil and sea salt.
  • Use enough to have the leaves glisten but not enough to have excess in the bowl
  • Add other ingredients
  • Toss together
  • Serve

When someone tells me they’re bringing bean salad to a carry-in, I get excited. When that someone is Dave’s aunt, I get doubly-excited! Aunt Babe (her real name is Miriam but she’s Babe to her family) got this recipe from her oldest sister Esther, so I guess we could say it’s Aunt Esther’s recipe.

Have it your way bean salad

As with any recipe, you can tweak the beans or the amounts of other vegetables if there are some that you like better or best. Choose red or yellow peppers over green if you’d like more color. Nix the peppers if your family doesn’t care for them. Sliced onion instead of grated is an option if you prefer. Use canola or olive oil. This recipe is easy to put together and fits in with any summer salad or picnic.

Ingredients
  

  • Note: all "cans" are 15-16 oz.
  • 1 can green beans
  • 1 can wax beans OR corn
  • 1 can kidney beans
  • 1/2 cup chopped green peppers
  • 1 cup sliced celery
  • 3/4 cup sugar
  • 1/2 cup vinegar
  • 1/2 cup salad oil
  • grated onion - or sliced onions
  • 1 tsp. salt
  • 1 tsp. pepper

Instructions
 

  • Drain and rinse canned vegetables
  • Mix beans and vegetables together
  • Combine vinegar, sugar, and salad oil with salt and pepper
  • Mix the beans and dressing together
  • Chill until ready to serve

Kidney Bean Salad

I grew up with this kidney bean salad; it was especially refreshing in the summer, but it works well as a winter salad as well. For this recipe, you’ll need kidney beans, onions, celery,vinegar, sugar, and a mayonnaise-based dressing. Mix it up a few hours or a day before to allow the flavor to seep through the beans. Be sure to drain the kidney beans as the recipe suggests!

Kidney Bean Salad

Ingredients
  

  • 2 1/2 cups canned kidney beans drained
  • 1/4 cup chopped celery
  • 2 hard=boiled eggs
  • 1 medium-sized onion minced
  • 1/2 tsp. salt
  • 2 Tbsp. sugar
  • 2 Tbsp. vinegar
  • 1/4 cup salad dressing
  • 2 Tbsp. cream

Instructions
 

  • Drain beans
  • Chop eggs, celery and onion and combine
  • Add drained beans
  • Mix all ingredients but salad dressing and cream together together and chill
  • Add cream to salad dressing,and blend together with other ingredients.

Orange Fluff

Some folks call this a salad, and some folks serve it as a dessert. Since it has jello and cottage cheese, pineapple and cool whip, you can call it whatever you like. I serve it as a salad because it has more “salad” than “dessert”, me thinks.

You need four ingredients, and you can use low fat, no fat, and sugar-free if you’d like. Or use the 4% fat and the jello with sugar. It’s your choice.

Dissolve the jello (sugar-free or regular) in the pineapple and juice. Add the cottage cheese and cool whip (low fat or regular), then chill until set. It’s ready to go. How simple is that?! This really is a cool and refreshing salad but it works well at any time of the year.

Orange Fluff

  • 1 can crushed pineapple with juice
  • 32 oz. cottage cheese
  • 8 oz. cool whip

  • Mix jello with pineapple and juice
  • Add cottage cheese, then cool whip
  • Chill for several hours until set
