Oreo Cookies

Oreo cookies – aka Whoopie pies.

Marj served these delicious Oreo Cookies when we visited her in Alabama a few weeks ago. She and her hubby are working as hostesses for a prison ministry, We Care. These whoopie pies (in addition to dozens of other cookies) are homemade and served to prisoners in the area at a yearly event.  She had a few left over, and I’m so glad she did.

This recipe is an easy make because you start with two different cake mixes. So easy, so simple, and so delightful!

The recipe calls for two different chocolate cake mixes. I could not find a Swiss Chocolate cake mix, so I substituted a dark chocolate cake mix. I’m sure you can use any other chocolate cake mix as well. Swiss chocolate is a smoother texture, so try to find one that has a smooth texture.

These Oreo cookies (whoopie pies) freeze well, so you can make them ahead and serve them at a later date. If you’re pushed for time, you can also make the cookies and filling ahead and freeze them separately. Put them together when you’re ready to serve.
