This is an easy one-dish meal that can be ready to serve with one hour after beginning. Serve with some fresh fruit or applesauce.
Ingredients
  • 2 large onions, diced
  • 1 green pepper, chopped
  • 1 clove garlic (optional)
  • 3 Tbsp olive oil or butter
  • 1 pound hamburger (fried and drained)
  • 2 cups canned tomatoes
  • ½ cup uncooked rice
  • 1 teaspoon chili powder
  • 1½ tsp. salt
  • ¼ teaspoon pepper
  • 1 can corn (optional)
Instructions
  1. Fry onion, pepper, and garlic in oil or butter
  2. Add hamburger, stirring together
  3. Add tomatoes, rice and seasonings
  4. Add corn (optional)
  5. Stir, then cover with a lid and simmer about 20-30 minutes until rice is cooked
  6. OR cover and bake in oven at 375 for approximately 50 minutes
