Homemade Unbaked Cheesecake

  • 1 3-oz. box lemon jello
  • 1 cup boiling water
  • 8 oz. cream cheese
  • 1½ cups sugar
  • 1 can evaporated milk, chilled
  • 1½ cup graham cracker crumbs
  • 6 Tbsp. butter or margarine
  • 1½ Tbsp. powdered sugar
  1. Dissolve jello in water; chill but do not set
  2. Mix cracker crumbs, butter, and powdered sugar. Save ½ cup for topping
  3. Spread the rest of the crumbs in bottom of 9 x 9 pan.
  4. Using cooled beaters in a cold bowl, whip chilled evaporated milk until it is stiff
  5. Mix sugar and cream cheese
  6. Add jello mixture and evaporated milk.
  7. Beat mixture for two minutes. then add jello mixture and evaporated milk and beat for two minutes.
  8. Pour into pan and sprinkle with topping.
  9. Chill.
  10. Freezes well also.
