Summer Seasonal Veggies

A quick fix for using summer veggies, especially when there are not enough of one veggie to feed the family. Combine into a tasty, eye-appealing stir-fry.
  • 4 cups green beans
  • 2 cups sliced squash
  • 1 cup sliced onions
  • 1 cup sliced or shredded cabbage
  • Olive oil
  • Salt, Pepper
  • Garlic powder (optional)
  • 1 Tablespoon bacon fat (optional)
  • 1-2 slices crumbled bacon (optional)
  1. Wash and slice or shred vegetables
  2. Fry bacon or used left-over bacon, then drain and crumble
  3. Put olive oil in a large skillet
  4. Add the vegetables and season with salt and pepper
  5. Add garlic powder if desired - as much as you like
  6. Stir-fry until vegetables are tender
  7. Put bacon fat on top of veggies and stir in
  8. Add bacon on top, stirring once
  9. Serve
