Chocolate Cake with Cream Cheese Frosting

An easy make-ahead cake that can be done in stages or all in one day. Be sure to chill your bowl and beaters for whipping the cream. You can use a long serrated knife or dental floss to cut the cake horizontally.
  • 2 cups flour
  • 2 cups sugar
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • ⅔ cup cocoa
  • ⅔ cup vegetable oil
  • 1 cup milk
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup hot coffee
  • 8 oz. cream cheese
  • ⅔ cup brown sugar
  • 1 teaspoon vanilla
  • ⅓ teaspoon salt
  • 2 cups whipping cream, whipped
  • 2 Tablespoons grated sem-sweet chocolate
  1. Sift the dry ingredients (flour through cocoa) together in a bowl
  2. Add oil, milk, eggs, and vanilla, beating for two minutes
  3. Blend in hot coffee
  4. Pour into 2 greased and floured 9-inch layer pans or 9 x 13 inch pan
  5. Bake at 350 for 30-35 minutes
  6. For cream filling, beat whipping cream until whipped
  7. Mix other ingredients together, then add to the cream cheese
  8. Cut both layers of cake in half horizontally.
  9. Layer: bottom of 1st cake, cream cheese filling; top of 1st cake; cream cheese filling;
  10. bottom of 2nd cake; cream cheese filling; top of 2nd cake; cream cheese filling.
  11. Sprinkle with grated chocolate
  12. Cover and refrigerate for 8 hours or overnight.
