Easy Freeze-Ahead Meatballs

This freeze-ahead meatballs are quick and easy. The best part, though, is that they are delicious! Mix your ingredients together and roll into balls. You can make large or small balls, and you can adjust your baking time accordingly.

Put the balls into a freezer container and freeze. You can put them into zip-lock bags and take as many out as you wish. When you are ready to serve, place the frozen meatballs into a flat baking dish. Pour the sauce over the top of the meatballs. If you want to use your own sauce or a favorite store-bought brand, go ahead. Just be sure to put enough on the freeze ahead meatballs so they can absorb the sauce while they are baking.

Bake, uncovered, at 350 for one hour.

Serve over rice, mashed potatoes, or with other sides.

My niece Bonita served these freeze-ahead meatballs at a fellowship meal at church, and I had to have the recipe, which she got from a cousin, Pearl Good. I’ve been making them ever since. They are such an easy fix. Pop these babies into the oven and then fix your rice or potatoes. Serve with a green salad or green vegetable.

Easy do-ahead meatballs that take little preparation. These are fast becoming a favorite of mine! Mix ahead and freeze, then pop into the oven from the freezer.

Ingredients
  

  • 3 pounds hamburger
  • 12 oz. evaporated milk
  • 1 cup oatmeal
  • 1 cup cracker crumbs
  • 2 eggs
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 2 tsp. chili powder
  • SAUCE; 2 cups ketchup 1 cup brown sugar, 3 Tbsp. vinegar, 1 tsp. mustard

Instructions
 

  • Mix all ingredients together.
  • Form into Balls.
  • Freeze
  • Mix sauce together and heat until sugar dissolves
  • Put frozen meatballs in uncovered baking dish
  • Pour sauce over top
  • Bake at 350 for 1 hour
