Texas Hash

You can fix this recipe to suit the size of your crowd and the likes of their palettes.  Some like it spicy, and some don’t. So just adjust the seasonings and the taste to suit yourself and your gang.  This is a one dish meal and you can finish it on top of the stove or let it bake in the oven.  You choose.

You’ll need onions, peppers, olive oil, canned tomatoes, uncooked rice, salt, pepper, and chili powder.  Oh yes, you’ll need some hamburger.  If you’ve got some already fried, drained and in the freezer, you can make quick work of this meal.

Saute your onion, green peppers and garlic (optional) in olive oil or butter.  Add hamburger (previously fried and drained), tomatoes, rice, and seasonings.  The recipe doesn’t call for corn, but I added a can of drained corn to the skillet.

Stir, cover, and simmer until the rice is done, OR you can put it into the oven and bake at 375 for 45-50 minutes.

Serve this over tortilla chips or rice – or both.

This is an easy one-dish meal that can be ready to serve with one hour after beginning. Serve with some fresh fruit or applesauce.

Ingredients
  

  • 2 large onions diced
  • 1 green pepper chopped
  • 1 clove garlic optional
  • 3 Tbsp olive oil or butter
  • 1 pound hamburger fried and drained
  • 2 cups canned tomatoes
  • 1/2 cup uncooked rice
  • 1 teaspoon chili powder
  • 1 1/2 tsp. salt
  • 1/4 teaspoon pepper
  • 1 can corn optional

Instructions
 

  • Fry onion, pepper, and garlic in oil or butter
  • Add hamburger, stirring together
  • Stir in tomatoes, rice and seasonings
  • Add corn (optional)
  • Stir, then cover with a lid and simmer about 20-30 minutes until rice is cooked
  • OR cover and bake in oven at 375 for approximately 50 minutes
