Soft-boiled Eggs with Avocado

Easy, simple, nutritious

Looking for a simple, easy,  nutritious breakfast?

Here is one of my favorites.  There’s really no recipe. All you need is a ripe avocado and a soft-boiled egg along with some sea salt and pepper.  Butter (optional) or olive oil can be added – but I usually don’t.

Avocados are a healthy food.  Rich in protein, potassium (more than a banana), Vitamin K and healthy fats, avocados are said to aid in the prevention and/or treatment of depression, vision, and inflammation.

For years, we were told that eggs were not good for us.  The pendulum has swung to the other side.  Eggs are high in protein as well as vitamins and minerals. Eggs are a “powerhouse of disease-fighting nutrients.”

For this breakfast (or any-time-of-the-day meal or snack), you’ll be packing a punch in addition to texture and taste.

Eggs with Avocado

So here is what you do:

            • Fix as many soft-boiled eggs as you’ll want.  I usually fix two if I’ve been exercising before breakfast
          • Slice an avocado and remove the seed.
          • Add the eggs – whole or sliced in half.
          • Season to your taste buds and enjoy!

How to soft boil eggs for avocado

To soft-boil, bring water to boil in a kettle, then drop in your eggs, turn the burner down to low or simmer.   Let the eggs simmer for 6-7 minutes.

While the eggs are boiling, choose an avocado that is ripe and ready to slice.   Wash the outside well, then slice it in two.

Take out the seed.  You can flake the avocado if you’d like, or just leave it like it is.  Season it now or wait until you have the egg placed on top.  Yes, I finally figured out that the round indentation left by the seed is just right for a soft-boiled egg.

When the time is up, drain the boiling water and run cold water over the eggs for a minute.  Then cool the eggs slightly in cold water.  When the eggs are cool enough to handle, peel the eggs.  Leave them whole or slice in two.

Put the egg into the avocado and season as desired.  Enjoy!

 

 

Note from Gert: This is a re-post from 2016. I ate these regularly until a few years ago – when I developed an allergy to avocados.  Yes, I tried not eating any for several months, but I knew I’d been had when my tongue swelled after having a very small portion of an avocado. Now I really have to be careful.  🙁

Seriously, I am so envious of anyone who can enjoy this meal. It is nutritious, tasty, healthy, and filling.
